In the heart of Hudson Square, New York, Chef Flynn McGarry opens a new chapter in his culinary journey: Cove. The restaurant embodies a Californian-inspired approach to fine dining, where seasonal ingredients, refined simplicity, and an intimate atmosphere come together. The chef, who has made a name for himself in gastronomy since his teenage years, approaches his craft with the same curiosity and discipline that marked his beginnings. With Cove, he aims to reinvent fine dining for a new generation — an experience that feels luxurious without being formal, where guest and chef meet on equal footing.
The philosophy behind Cove reflects the evolution of McGarry’s studio and practice, where cooking, design, and sustainability form a unified whole. Since the opening of his first restaurant, Gem, the chef has been known for his meticulous attention to detail and commitment to a conscious restaurant culture. At Cove, that vision is further realised: from the selection of local ingredients to the way the team collaborates. The kitchen is the beating heart of the restaurant, both literally and figuratively — open, transparent, and inviting. Every meal becomes a shared ritual, centred on care, precision, and respect for the product.
The menu follows the rhythm of the seasons and honours the integrity of each ingredient. The team grows vegetables, herbs, and flowers in their own garden in Brookhaven, Long Island, and works closely with local farmers and foragers in the region. The menu ranges from an eight-course tasting menu in the kitchen space to family-style dinners and à-la-carte dishes in the light-filled dining room. Dishes such as grilled pumpkin with peach and vadouvan, tomato consommé with ginger, or lobster with chanterelles and chamomile demonstrate the chef’s preference for subtle layering and respect for natural flavours.

The interior was designed by McGarry himself, with an eye for craftsmanship and West Coast modernism. The space combines woods such as cherry and ash, furniture by Grainwood Studio, soft hues from Farrow & Ball, Maharam curtains, and lighting by Louis Poulsen. The ceramic plates and bowls were specially designed in collaboration with North American ceramists. Every detail contributes to a restrained, almost homely atmosphere that encourages calm and focus. A selection of these objects will also be available at Gem Home, McGarry’s store and café in Nolita.
Cove is a redefinition of what hospitality can mean today. Flynn McGarry has created an environment that is sustainable in every sense, not only in its products but also for the people who work with them. The team moves freely between kitchen and dining room, blurring the distance between guest and creator. The result is a place where gastronomy feels alive, intimate, and sincere. A restaurant that, as its name suggests, offers shelter and tranquility: a protected bay in the heart of the city.
